Minimum On-Hand Quantity

The Portal Chef Set Up Menus Set Up Minimum On-Hand Quantity

Use Set Up Minimum On-Hand Quantity to manually designate specific item availability. Chef compares the standard projection with the specified minimum on-hand quantity and displays whichever is greater.

Nota

Minimum On-Hand Quantity only applies to the cook list.

To set up a Minimum On-Hand Quantity for an item:

  1. From the Store Selector list on the left, select a site.

    • Alternatively, use the Search field to locate and select a site.

  2. From the Products list, select a product.

  3. From the Minimum On-Hand Quantity table, select:

    • Day

    • Time Period(s) and/or Day Part(s)

    • Amount of Product

  4. On the upper-right of the panel, select Save Settings.

  5. On the Save confirmation message, select OK.

  6. From the menu list on the left of The Portal, select Sync Changes to Restaurants.

Copy Settings within a Site

To copy Minimum On-Hand Quantity settings to another site:

  1. From the Store Selector list on the left, select a site.

    • Alternatively, use the Search field to locate and select a site.

  2. From the Products list, select a product.

  3. On the upper-right of the panel, select Copy Settings.

  4. From the Selected Products list of the Copy Settings from Store panel, select the Product(s) to copy.

  5. On the right of the Copy Settings from Store panel, select a Copy From Day.

  6. On the right of the Copy Settings from Store panel, select the Copy To Day(s).

  7. On the upper-right of the panel, select Copy.

  8. On the bottom of the Copy Settings confirmation, select Yes.

    • Alternatively, select No to exit the confirmation without changes.

  9. On the Save confirmation message, select OK.

  10. From the menu list on the left of The Portal, select Sync Changes to Restaurants.

Copy Settings to Another Site

To copy Minimum On-Hand Quantity settings to another site:

  1. From the Store Selector list on the left, select a site.

    • Alternatively, use the Search field to locate and select a site.

  2. From the Products list, select a product.

  3. On the upper-right of the panel, select Copy Settings.

  4. From the Target Store Selector of the Copy Settings from Store panel, select the target sites.

  5. From the Selected Products list of the Copy Settings from Store panel, select the Product(s) to copy.

  6. On the right of the Copy Settings from Store panel, select a Copy From Day.

  7. On the right of the Copy Settings from Store panel, select the Copy To Day(s).

  8. On the upper-right of the panel, select Copy.

  9. On the bottom of the Copy Settings confirmation, select Yes.

    • Alternatively, select No to exit the confirmation without changes.

  10. On the Save confirmation message, select OK.

  11. From the menu list on the left of The Portal, select Sync Changes to Restaurants.

Setting

Description

Days of Week

The Days of the Week are displayed in the ribbon above the table. The highlighted day is active.

Day Part Banner

The Day Part Banner is displayed vertically, on the left of the table. Selecting a Day Part automatically selects all 15 minute time periods within that Day Part.

Time

The Time column displays specific time periods in 15 minute increments. It is possible to select multiple time periods.

Min. Pan

(Read-only) Use this column to determine the amount of product to select. The amount of product selected must be equal to or greater than the Min. Pan amount.

Max. Pan

(Read-only) Use this column to determine the amount of product to select. The amount of product selected must not exceed the Max. Pan amount.

# of Pans

(Read-only) Use this column to determine the amount of product to select.

Enter by (Each, Pan)

Select to specify amounts by Each or by Pan.

Min. On Hand by Pan

This field represents the pan amount of the item to prepare. Pan amount options range from one-quarter (1/4) of a pan to twelve (12) pans. Use the dropdown to select the portion of a pan, or the number of whole pans.

  • The amount selected may not exceed the number listed in the # of Pans field.

Min. On Hand by Each

This number represents the amount of the item to prepare. To enter an amount in this field:

  • Use the up/down arrows in the field to select the amount, or

  • Use the keyboard to type a whole number in the field.
